Testy Tanks

In preparation for our first harvest season in the new facility we are testing all our spanking new stainless steel tanks for leaks.  Due to the delicate nature of the wines to be contained within, we cannot test the tanks with normal neutral water (ph of 7) instead we create a water/citric acid mix (~ph of 3.2).  This way, once we’ve pumped the water through each tank to make sure none of the valves or doors leak, the tanks themselves will be chemically tempered to receive the wines.
